05 - 1 cup unsalted butter, softened
06 - 1 1/2 cups granulated sugar
07 - 1 large egg
08 - 1 teaspoon vanilla extract
09 - 2 tablespoons fresh lemon juice
10 - 1 tablespoon lemon zest

→ Finishing

11 - Extra granulated sugar for rolling

# Steps:

01 - Preheat oven to 350°F and line two baking sheets with parchment paper.
02 - In a medium bowl, whisk flour, baking soda, baking powder, and salt until evenly combined.
03 - In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
04 - Beat in the egg, vanilla extract, fresh lemon juice, and lemon zest until thoroughly blended.
05 - Gradually add the dry ingredients to the wet mixture, mixing until a uniform dough forms.
06 - Scoop one-tablespoon portions of dough, roll into balls, and coat each ball in granulated sugar.
07 - Arrange dough balls on prepared baking sheets, leaving room for spreading. Bake for 9 to 11 minutes until edges are lightly golden.
08 - Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
