# Ingredients:

14 - 7 cups low sodium chicken broth (or vegetable broth)
15 - 9 sheets dry lasagna noodles, broken into 2-inch pieces
16 - 2 cups fresh spinach leaves, optional

# Steps:

01 - In a large pot over medium-high heat, cook ground beef and Italian sausage until well browned, seasoning with salt and black pepper. Drain excess fat and transfer the cooked meat to a bowl.
02 - Heat olive oil in the same pot over medium heat. Add chopped onion and sauté for 5 minutes, stirring occasionally, until softened. Add minced garlic and cook for 1 to 2 minutes until fragrant.
03 - Stir in tomato paste and cook for 1 minute. Add marinara sauce, red pepper flakes, parsley, oregano, basil, and chicken broth. Return browned meat to the pot. Bring to a boil over medium-high heat.
04 - Add broken lasagna noodles to the boiling soup. Reduce heat to medium-low and simmer, stirring occasionally, until noodles are tender, about 10 to 12 minutes. Add spinach, if using, and stir until wilted.
05 - In a small bowl, mix ricotta cheese, shredded mozzarella, and grated Parmesan until thoroughly combined.
06 - Ladle hot soup into bowls. Top each serving with a generous scoop of the cheese mixture and garnish with fresh basil leaves. Serve immediately.
