Kung Pao Chicken Noodles (Print Version)

# Ingredients:

→ For the Chicken

01 - 1 pound chicken breast, cut into 1-inch pieces
02 - 12 ounces of your favorite noodles (brown rice udon or rice noodles work great!)
03 - 2 tablespoons low sodium tamari or soy sauce
04 - 1 tablespoon honey for that perfect hint of sweetness
05 - 1 tablespoon chili paste for a kick
06 - 1 tablespoon toasted sesame oil
07 - ½ cup diced green onion (white parts)
08 - 1 tablespoon minced fresh garlic

→ For that Amazing Sauce

09 - ½ cup low sodium tamari or soy sauce
10 - 1 tablespoon creamy peanut butter
11 - 2 tablespoons rice vinegar
12 - 2 tablespoons chili paste (sambal oelek)
13 - 1-2 tablespoons brown sugar (adjust to your sweetness preference)
14 - ¼ teaspoon ground ginger
15 - 1½ tablespoons toasted sesame oil
16 - ½ teaspoon red pepper flakes
17 - 3 tablespoons water mixed with 1 tablespoon cornstarch

→ For the Finishing Touch

18 - ⅓ cup crushed peanuts for that perfect crunch
19 - ⅓ cup diced green onion (green parts)

# Instructions:

01 - Cut your chicken into bite-sized pieces (about an inch each) and pop them in a bowl. Mix in the soy sauce/tamari, honey, and chili paste. Let it hang out and marinate - 30 minutes works, but 1-2 hours is even better!
02 - Get a pot of water boiling with a good pinch of salt. Cook your noodles following the package directions. Once they're done, drain them and set aside.
03 - Mix up all your sauce ingredients in a bowl, except the water and cornstarch - we'll use those later to thicken things up.
04 - Heat up that sesame oil in a skillet over medium-low. Toss in your white parts of green onion and let them sizzle for 2-3 minutes. Add the garlic and cook for another minute until it's smelling amazing.
05 - Add your marinated chicken to the pan (toss any extra marinade). Cook each side for 2-3 minutes until the chicken hits 165°F inside.
06 - Pour your sauce into a pot over low heat. Mix the cornstarch with water and stir it in. Let it thicken up a bit, then add those noodles and give everything a good toss. Mix in your chicken and let all those flavors get cozy for a minute or two.
07 - Sprinkle those crushed peanuts and green onions on top. Feel free to add some steamed broccoli or bell peppers if you're feeling extra!

# Notes:

01 - Any noodles work great here - rice noodles are fantastic, but regular spaghetti does the job too!
02 - Make sure to use low sodium soy sauce/tamari - if you've only got regular, just use half the amount
03 - This dish is super adaptable - throw in your favorite veggies like broccoli or bell peppers
