Immediately transfer the blanched spinach to an ice bath to halt cooking. Drain thoroughly and gently squeeze out excess water.

Place the spinach in a mixing bowl. Add the minced garlic, chopped green onion, soy sauce, salt, sesame oil, and toasted sesame seeds. Toss until evenly coated.
