Korean Spinach Side Dish (Print Version)

Tender spinach, sesame oil, garlic, and soy sauce combine for a classic Korean-style side.

# Ingredients:

→ Vegetables

01 - 1 bunch (10 oz) fresh spinach, ends trimmed and cut into 2-inch pieces
02 - 1 stalk green onion, finely chopped

→ Aromatics and Seasonings

03 - 1 clove garlic, finely minced
04 - 2 teaspoons soy sauce
05 - 1/8 teaspoon kosher salt

→ Sesame Components

06 - 2 teaspoons toasted sesame oil
07 - 2 teaspoons toasted sesame seeds

# Steps:

01 - Place the spinach on a cutting board, trim the ends, and slice into 2-inch lengths.
02 - Bring a large pot of water with a pinch of salt to a rolling boil over high heat. Add the spinach and blanch for 30 seconds, just until wilted.
03 - Immediately transfer the blanched spinach to an ice bath to halt cooking. Drain thoroughly and gently squeeze out excess water.
04 - Place the spinach in a mixing bowl. Add the minced garlic, chopped green onion, soy sauce, salt, sesame oil, and toasted sesame seeds. Toss until evenly coated.
05 - Arrange the seasoned spinach in a serving dish. Serve as a chilled side accompaniment.
