# Ingredients:

→ Dressing

01 - 1/4 cup extra-virgin olive oil or hazelnut oil
02 - 1 tablespoon apple cider vinegar
03 - 2 teaspoons honey
04 - 1 teaspoon whole grain mustard
05 - 1/2 teaspoon fine sea salt
06 - Freshly ground black pepper, to taste

→ Slaw

07 - 1 large apple, cored and cut into matchsticks
08 - 1 medium kohlrabi, peeled and cut into matchsticks
09 - 1/4 cup thinly sliced red onion
10 - 1/4 cup toasted chopped hazelnuts
11 - 1/4 cup finely chopped parsley, more for garnish

# Steps:

01 - In a large mixing bowl, whisk together the olive oil or hazelnut oil, apple cider vinegar, honey, whole grain mustard, and fine sea salt until combined.
02 - Add the apple matchsticks, kohlrabi matchsticks, thinly sliced red onion, toasted chopped hazelnuts, and chopped parsley to the bowl.
03 - Toss the mixture until all the components are well coated with the dressing. Adjust seasoning with additional salt or freshly ground black pepper to taste. Garnish with more parsley and serve immediately.
