In a large mixing bowl, combine the ground beef, egg, feta cheese, chopped basil, minced garlic, salt, and pepper. Mix with hands until well blended.

Form the meat mixture into 14 equal-sized patties.

Heat a large skillet over medium-high heat. Cook the patties until they reach your desired level of doneness, working in batches if necessary depending on skillet size.

Remove the patties from the skillet and set aside. Drain excess grease from the pan.

Lower the temperature to medium. Add beef stock to the pan and deglaze by scraping the flavorful bits from the bottom of the pan.

Whisk in heavy whipping cream, Italian seasoning, chopped green onions and tomato paste until well combined.

Add salt and pepper to taste, and simmer until the sauce has thickened.

Return the patties to the skillet and toss to coat in the sauce.

Serve hot with additional freshly chopped green onions as garnish if desired.
