01 - 1 pound ground beef
02 - 1/2 teaspoon salt
03 - 1/4 teaspoon freshly ground black pepper
04 - 4 large flour tortillas
05 - 2 cups shredded cheddar cheese
06 - 1/4 cup chopped dill pickles

07 - 1/2 cup mayonnaise
08 - 2 tablespoons ketchup
09 - 2 tablespoons finely chopped pickles
10 - 1 tablespoon finely diced onion
11 - 2 teaspoons white vinegar

# Steps:

01 - Preheat the Blackstone Grill to medium-high, approximately 400°F. Add ground beef to the hot surface and cook, breaking it apart, until completely browned and cooked through. Season with salt and black pepper as it cooks.
02 - In a bowl, whisk together mayonnaise, ketchup, finely chopped pickles, diced onion, and white vinegar until smooth and creamy. Reserve for assembly.
03 - Place flour tortillas flat on the grill. Spread a generous layer of special sauce over one half of each tortilla. Distribute the cooked ground beef, chopped dill pickles, and shredded cheddar cheese evenly over the sauce.
04 - Fold each tortilla over to enclose the fillings. Grill for 2 to 3 minutes until the underside turns golden brown. Flip carefully and cook for another 2 to 3 minutes until the cheese melts and the exterior becomes crisp.
05 - Move quesadillas to a cutting board and cut each into four wedges with a sharp knife or pizza cutter. Serve immediately while hot.
