In a bowl, whisk together mayonnaise, ketchup, finely chopped pickles, diced onion, and white vinegar until smooth and creamy. Reserve for assembly.

Place flour tortillas flat on the grill. Spread a generous layer of special sauce over one half of each tortilla. Distribute the cooked ground beef, chopped dill pickles, and shredded cheddar cheese evenly over the sauce.

Fold each tortilla over to enclose the fillings. Grill for 2 to 3 minutes until the underside turns golden brown. Flip carefully and cook for another 2 to 3 minutes until the cheese melts and the exterior becomes crisp.
