Juicy chicken, peaches, and jalapeños threaded onto skewers with vibrant peach glaze for a flavorful twist.

# Ingredients:

→ Chicken Preparation

01 - 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
02 - 1 teaspoon kosher salt
03 - 1/2 teaspoon ground black pepper
04 - 1/2 teaspoon chili powder
05 - 2 tablespoons extra virgin olive oil

→ Skewer Assembly

06 - 15 wooden skewers, soaked in water for 30 minutes
07 - 4 yellow peaches, pitted and cut into chunks
08 - 3 medium jalapeños, seeded and cut into chunks

→ Peach Glaze

09 - 1/2 cup peach preserves
10 - 1 tablespoon extra virgin olive oil
11 - 1 teaspoon soy sauce
12 - 1 teaspoon apple cider vinegar
13 - 1 teaspoon Dijon mustard
14 - 1/2 teaspoon minced garlic
15 - 1/2 teaspoon kosher salt
16 - 1/8 teaspoon ground black pepper
17 - 1/8 teaspoon red pepper flakes

# Steps:

01 - In a large bowl, combine the chicken cubes with kosher salt, black pepper, chili powder, and olive oil. Toss until coated evenly.
02 - Thread chicken, peach chunks, and jalapeño pieces alternately onto pre-soaked wooden skewers.
03 - Preheat air fryer to 375°F. Lightly brush the skewers with olive oil to minimize sticking.
04 - Arrange the skewers in a single layer within the air fryer basket. Cook for 11-12 minutes, turning once, until chicken reaches an internal temperature of 165°F.
05 - While the skewers cook, add all peach glaze ingredients to a small saucepan over medium heat. Stir frequently until mixture is heated through and fully emulsified.
06 - Once cooked, generously brush the skewers with the warm peach glaze.
07 - Transfer skewers to a platter and serve hot.

# Notes:

01 - Soaking wooden skewers prevents burning during high-heat cooking.
02 - Use ripe but firm peaches for best texture.
03 - For a spicier flavor, retain some jalapeño seeds.
