# Ingredients:

→ Poultry

01 - 2 pounds chicken breast, diced into small pieces

→ Breading and Coating

02 - 1/2 cup all-purpose flour
03 - 1/4 cup cornstarch
04 - 1 teaspoon garlic powder
05 - 1/2 teaspoon freshly ground black pepper
06 - 1 teaspoon kosher salt

→ Binding

07 - 2 large eggs, beaten

→ Hot Honey Sauce

08 - 1/2 cup honey
09 - 1/2 cup hot sauce

→ Frying

10 - 4 cups vegetable oil, for deep frying

# Steps:

01 - Add vegetable oil to a heavy-bottomed pot and bring to 375°F over medium heat.
02 - While oil heats, whisk together the flour, cornstarch, garlic powder, black pepper, and salt in a large mixing bowl.
03 - Evenly toss diced chicken breast in the seasoned flour mixture until all surfaces are coated.
04 - Beat the eggs in a separate shallow dish. Dip each piece of coated chicken into the beaten eggs.
05 - Return all egg-dipped chicken pieces to the flour mixture and toss again, ensuring a thick, even coating.
06 - Working in batches of up to 8 pieces, fry coated chicken in hot oil for 3 to 4 minutes or until golden brown and cooked through. Transfer cooked pieces to a plate lined with paper towels. Repeat with remaining chicken.
07 - Combine honey and hot sauce in a small saucepan. Heat over medium until the mixture begins to bubble gently, then remove from heat.
08 - Generously drizzle warm hot honey sauce over the cooked popcorn chicken. Serve immediately.

# Notes:

01 - To ensure a crispy crust, avoid overcrowding the pot during frying and allow oil to return to temperature between batches.
