In a small bowl, combine honey, hot sauce, and chili flakes. Microwave for 10 to 20 seconds until warmed, then stir well. Allow to cool before use. Alternatively, simmer on the stove briefly and let cool. Adjust heat by varying chili and sauce quantity.

Spread an even layer of pizza sauce onto each flatbread. Top with mozzarella, arrange pepperoni slices, and add olives and jalapeño rings as desired. To minimize pepperoni curling, add extra mozzarella atop the slices.

Using oven mitts, remove preheated tray. Place prepared flatbreads onto the tray and bake for 8 to 10 minutes until the cheese is bubbling and crust edges are lightly charred.

Remove flatbreads from the oven and immediately drizzle with the desired amount of hot honey. Serve warm for best flavor.
