Honeyed Brie Blackberry Swirls (Print Version)

Crisp pastry rolled with Brie, blackberries, honey, and herbs. A sweet, savory swirl for gatherings.

# Ingredients:

→ Pastry Base

01 - 1 sheet frozen puff pastry, thawed

→ Filling

02 - 4 ounces Brie cheese, rind removed and sliced
03 - 3 ounces fresh blackberries, halved if large
04 - 2 tablespoons honey
05 - 1 teaspoon fresh rosemary, finely chopped

→ Finishing

06 - 1 large egg, beaten

# Steps:

01 - Preheat the oven to 400°F and line a baking sheet with parchment paper.
02 - On a lightly floured surface, roll out the puff pastry sheet to roughly 10 x 12 inches.
03 - Arrange Brie slices evenly over the surface of the puff pastry.
04 - Scatter blackberries over the Brie, then drizzle with honey and sprinkle chopped rosemary evenly on top.
05 - Starting at one long edge, tightly roll the pastry into a log. Using a sharp knife, cut the log into 12 equal swirls.
06 - Place each swirl, cut side up, onto the prepared baking sheet. Brush the tops with beaten egg.
07 - Bake for 15 to 20 minutes, or until the pastry is golden brown and puffed.
08 - Remove from the oven and serve the swirls warm.

01 - For easier slicing, chill the filled pastry log in the freezer for 10 minutes before cutting.
