Honey Mustard Potatoes (Print Version)

Golden baby potatoes tossed in honey mustard, Dijon, garlic, and spices for a flavorful side.

# Ingredients:

→ Potatoes

01 - 1 1/2 pounds baby potatoes or Yukon Gold potatoes, diced into 1.5-inch cubes

→ Sauce

02 - 2 tablespoons olive oil or unsalted butter
03 - 1/4 cup honey
04 - 2 tablespoons Dijon mustard
05 - 2 tablespoons whole grain mustard
06 - 2 tablespoons apple cider vinegar
07 - 2 cloves garlic, finely chopped
08 - 1/4 teaspoon paprika
09 - Kosher salt, to taste
10 - Freshly ground black pepper, to taste

# Instructions:

01 - Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook for about 10 minutes, or until just fork-tender. Drain thoroughly.
02 - Heat olive oil in a large skillet over medium heat. Add the drained potatoes and cook, turning occasionally, until the surfaces turn golden brown, about 10 minutes.
03 - Lower the heat to medium-low. Add honey, Dijon mustard, whole grain mustard, apple cider vinegar, chopped garlic, and paprika to the skillet. Season with salt and pepper. Toss until all potatoes are thoroughly coated and cook for 2 to 3 minutes, allowing the sauce to thicken slightly.
04 - Transfer potatoes to a serving dish and serve immediately while warm.

01 - For extra crispness, pat potatoes dry after boiling before sautéing.
