In a big bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined. Pour into a large jar or container for storage.

When you're ready for pancakes, heat up your griddle to 325°F or warm a skillet over medium-high heat.

Grab 2 cups of your pancake mix and combine it with the milk, egg, and vanilla (if using) in a large bowl. Stir just until the lumps are mostly gone - don't overmix! If it looks too thick, add a splash more milk.

Butter your hot griddle and pour about 1/4 cup batter for each pancake. Let them cook for about 2 minutes until you see bubbles on top, then flip and cook another minute until golden brown.
