Easy Homemade Pancake Mix (Print Version)

# Ingredients:

→ For the Mix

01 - 4 cups all-purpose flour (520g)
02 - 1/4 cup granulated sugar (50g)
03 - 4 teaspoons baking powder
04 - 2 teaspoons baking soda
05 - 1 teaspoon kosher salt

→ To Make Pancakes

06 - 2 cups prepared pancake mix (260g)
07 - 1 1/2 cups milk
08 - 1 large egg
09 - Splash of vanilla extract (optional)
10 - Butter for greasing the pan

→ For Serving

11 - Butter, maple syrup, and fresh berries as desired

# Instructions:

01 - In a big bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined. Pour into a large jar or container for storage.
02 - When you're ready for pancakes, heat up your griddle to 325°F or warm a skillet over medium-high heat.
03 - Grab 2 cups of your pancake mix and combine it with the milk, egg, and vanilla (if using) in a large bowl. Stir just until the lumps are mostly gone - don't overmix! If it looks too thick, add a splash more milk.
04 - Butter your hot griddle and pour about 1/4 cup batter for each pancake. Let them cook for about 2 minutes until you see bubbles on top, then flip and cook another minute until golden brown.

01 - The dry mix keeps for 6 months in an airtight container at room temperature, or up to a year in the freezer
02 - You can swap milk and egg with 1 1/2 cups water in a pinch
