Homemade McGriddle Breakfast Sandwich (Print Version)

# Ingredients:

→ Pancake Mix

01 - 1 ½ cups all-purpose flour
02 - 3 ½ teaspoons baking powder
03 - 2 tablespoons white sugar
04 - ¼ teaspoon salt
05 - 1 ¼ cups milk
06 - 1 ½ teaspoons vanilla extract
07 - 4 tablespoons butter, melted
08 - 4 tablespoons pure maple syrup, divided

→ McGriddle Fillings

09 - 4 large eggs
10 - 4 slices of cheese
11 - 4 cooked bacon slices or sausage patties

# Instructions:

01 - Sift flour, baking powder, sugar, and salt together in a large mixing bowl. Add milk, vanilla extract, melted butter, and 1 egg; mix until smooth to form a thick pancake batter.
02 - Heat an electric griddle or pan over medium-low heat and coat with cooking spray. Spray the inside of a metal biscuit cutter with non-stick spray and place it in the pan. Using an ice cream scoop, pour batter into the biscuit cutter.
03 - Add about 2 teaspoons of maple syrup to the center of each pancake and use a toothpick to lightly swirl it into the batter while cooking.
04 - Cook until bubbles form and edges are dry, about 2 minutes. Carefully remove the biscuit cutter and gently flip the pancake. Cook until browned on the other side. Repeat with remaining batter.
05 - While pancakes are cooking, prepare bacon slices or sausage patties in a separate frying pan.
06 - Place cooked pancakes on a dish and cover with aluminum foil to keep warm.
07 - Clean the biscuit cutter and spray the inside again with cooking spray. Heat a large skillet to medium heat and drop an egg into the center of the biscuit cutter. Season with a pinch of salt. Cook until sides are slightly set, about 2 minutes. Repeat for all 4 eggs.
08 - Gently remove the biscuit cutter and carefully flip each egg. Cook until desired doneness on the other side.
09 - Assemble your homemade McGriddle by topping one pancake with a slice of cheese, cooked egg, and bacon or sausage. Top with a second pancake to complete the sandwich.

# Notes:

01 - For a more authentic McGriddle experience, make sure the maple syrup pockets are evenly distributed throughout the pancakes.
