Easy Homemade Cheesy Mashed Potato (Print Version)

Crispy mashed potato puffs with cheddar and a creamy, flavorful center. Ideal for snacks or sides.

# Ingredients:

→ Mashed Potato Base

01 - 2 cups cold mashed potatoes
02 - 2 large eggs
03 - 1 cup shredded cheddar cheese
04 - 1/4 cup milk or cream
05 - 1/4 cup chopped green onions or chives
06 - 1/2 teaspoon garlic powder
07 - 1/4 teaspoon ground black pepper
08 - Salt, to taste

→ For Preparing the Pan

09 - Butter or nonstick spray, for greasing

# Instructions:

01 - Set oven to 400°F. Thoroughly grease all wells of a standard 12-cup muffin tin with butter or nonstick spray to prevent sticking.
02 - In a large bowl, mix the mashed potatoes, eggs, milk or cream, shredded cheddar, green onions or chives, garlic powder, black pepper, and salt if needed. Stir until the mixture is uniform and cohesive.
03 - Evenly distribute the potato mixture into the prepared muffin tin, filling each cup nearly to the top. Smooth the surface with the back of a spoon.
04 - Bake for 25 to 30 minutes, or until the tops have developed a golden-brown color and a crisp texture. Allow puffs to cool in the tin for 5 minutes. Run a knife around the edges to assist with removal if needed.
05 - Present the potato puffs warm as a side or appetizer. Optionally, top with sour cream, extra cheese, or a drizzle of ketchup according to preference.
