Hoisin Garlic Noodles Skillet (Print Version)

Buttery noodles in savory hoisin garlic sauce with Parmesan and scallions. Quick, full-flavored comfort.

# Ingredients:

→ Secret Sauce

01 - 2 tablespoons soy sauce
02 - 1 tablespoon oyster sauce
03 - 2 teaspoons Worcestershire sauce
04 - 2 teaspoons fish sauce
05 - 1/4 teaspoon sesame oil
06 - 1 pinch cayenne pepper

→ Noodles and Garnish

07 - 4 tablespoons unsalted butter
08 - 8 cloves garlic, minced
09 - 6 ounces dry spaghetti
10 - 1/4 cup finely grated Parmigiano-Reggiano cheese
11 - 1 tablespoon chopped green onion
12 - 1 pinch red pepper flakes

# Steps:

01 - In a small bowl, combine soy sauce, oyster sauce, Worcestershire sauce, fish sauce, sesame oil, and cayenne pepper. Stir until fully blended.
02 - Melt unsalted butter in a large skillet over medium heat. Add the minced garlic and cook until aromatic, about 1 minute. Stir in the prepared secret sauce and remove the pan from heat.
03 - Bring a large pot of salted water to a boil. Cook spaghetti until al dente, around 12 minutes. Reserve about 1/2 cup of cooking water before draining.
04 - Using tongs, transfer the cooked spaghetti directly into the skillet with the sauce, allowing some pasta water to accompany the noodles. Toss thoroughly to coat. Add the grated Parmigiano-Reggiano, mixing until the cheese melts and the sauce becomes silky. If needed, add a splash of reserved pasta water to loosen.
05 - Plate the noodles and finish with chopped green onions and a sprinkling of red pepper flakes. Serve immediately.

# Notes:

01 - For the best texture, add the Parmesan cheese while the pasta is still hot so it emulsifies with the sauce.
