03 - 1 teaspoon baking powder
04 - ½ teaspoon garlic powder
05 - ¼ teaspoon cayenne powder
06 - ¼ teaspoon onion powder

07 - 1 cup shredded mild cheddar cheese
08 - 2 tablespoons chopped fresh chives
09 - 1 cup frozen sweet corn

→ Wet Ingredients

10 - 1 egg
11 - ⅔ cup milk
12 - 2 tablespoons oil, plus more for cooking

# Steps:

01 - In a large mixing bowl, whisk together the protein pancake flour, baking powder, salt, garlic powder, cayenne powder, onion powder, shredded cheddar cheese, and chopped chives until evenly combined.
02 - Add milk, oil, and egg to the dry mixture. Gently fold ingredients together until just incorporated, being careful not to overmix.
03 - Gently fold in frozen sweet corn, ensuring even distribution throughout the batter.
04 - Heat a thin layer of oil in a large skillet over medium heat until shimmering.
05 - Portion out batter using a scoop or large spoon and add to the hot skillet. Cook each fritter for 3 to 4 minutes per side until golden brown and crisp.
06 - Transfer cooked fritters to a plate lined with paper towels to remove any excess oil.
07 - Serve fritters warm, garnished with extra chives if desired.

# Notes:

01 - For best texture, avoid overmixing the batter. Thaw and drain corn if there is excess moisture before adding.
