Healthy Chicken Salad Wraps (Print Version)

Tender chicken, Greek yogurt, crunchy veggies, and fruit wrapped in wheat tortillas for a refreshing lunch.

# Ingredients:

→ Chicken Salad Mixture

01 - 2 cups cooked shredded chicken (rotisserie or poached)
02 - 1/2 cup plain Greek yogurt
03 - 1 tablespoon Dijon mustard
04 - 1 tablespoon lemon juice
05 - 1/2 teaspoon garlic powder
06 - 1/2 teaspoon salt
07 - 1/4 teaspoon black pepper
08 - 1/2 cup diced celery
09 - 1/2 cup diced apple or seedless grapes
10 - 1/4 cup chopped walnuts or almonds (optional)
11 - 2 tablespoons chopped fresh parsley or chives

→ Wrap

12 - 4 whole wheat tortillas or large lettuce leaves

# Steps:

01 - In a large bowl, whisk together the Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and black pepper until smooth.
02 - Add shredded chicken, diced celery, diced apple or grapes, nuts if using, and fresh parsley or chives to the bowl. Stir until all ingredients are thoroughly coated with the dressing.
03 - Place a whole wheat tortilla or large lettuce leaf on a flat surface. Spoon one quarter of the chicken salad mixture down the center of each wrap.
04 - Roll up each wrap tightly, folding in the sides as you go. Slice in half and serve immediately, or wrap in parchment paper for a portable meal.

# Notes:

01 - Rotisserie chicken provides excellent flavor and saves time. For meal prep, store salad mixture separately and assemble wraps just before serving.
