# Ingredients:

→ Chicken and Vegetables

01 - 4 boneless, skinless chicken breasts or thighs
02 - 2 cups pineapple chunks, fresh or canned and drained
03 - 1 red bell pepper, sliced
04 - 1 green bell pepper, sliced
05 - 1 yellow bell pepper, sliced
06 - 1 medium red onion, sliced
07 - 1 tablespoon olive oil
08 - Salt, to taste
09 - Black pepper, to taste
10 - 1 tablespoon sesame seeds, for garnish (optional)
11 - 2 tablespoons green onions, finely chopped, for garnish (optional)

→ Hawaiian Sauce

12 - 1/2 cup pineapple juice
13 - 1/4 cup low sodium soy sauce
14 - 3 tablespoons honey or brown sugar
15 - 1 tablespoon rice vinegar or apple cider vinegar
16 - 1 teaspoon sesame oil (optional)
17 - 3 cloves garlic, minced
18 - 1 teaspoon grated ginger (optional)
19 - 1 tablespoon cornstarch
20 - 2 tablespoons water

# Instructions:

01 - Preheat the oven to 400°F. Line a large sheet pan with parchment paper or grease lightly.
02 - In a small saucepan, combine pineapple juice, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Heat over medium, stirring occasionally, until the mixture starts to simmer.
03 - In a separate bowl, whisk cornstarch with water to form a slurry. Stir the slurry into the simmering sauce and cook for 1 to 2 minutes until the sauce thickens. Remove from heat and set aside.
04 - Arrange chicken breasts or thighs in the center of the prepared sheet pan. Distribute pineapple chunks, red, green, and yellow bell peppers, and sliced red onion around the chicken.
05 - Drizzle vegetables with olive oil and toss to coat evenly. Season chicken and vegetables with salt and black pepper.
06 - Brush half of the Hawaiian sauce over the chicken. Drizzle remaining sauce over the vegetables and toss to coat.
07 - Roast in the oven for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F and vegetables are tender and caramelized.
08 - For extra caramelization, broil the pan for 2 to 3 minutes at the end of cooking, watching closely to prevent burning.
09 - Sprinkle with sesame seeds and chopped green onions if desired. Serve warm, accompanied by steamed rice, cauliflower rice, or noodles.

01 - Chicken thighs offer a juicier result compared to breast. To ensure the chicken remains moist, do not overcook and allow for resting before slicing.
