Hawaiian Banana Nut Bread (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 3 cups all-purpose flour
02 - ¾ teaspoon salt
03 - 1 teaspoon baking soda
04 - 2 cups white sugar
05 - 1 teaspoon ground cinnamon
06 - 1 cup chopped walnuts

→ Wet Ingredients

07 - 3 eggs, beaten
08 - 1 cup vegetable oil
09 - 2 cups mashed very ripe banana
10 - 1 (8 ounce) can crushed pineapple, drained
11 - 2 teaspoons vanilla extract

→ Mix-ins

12 - 1 cup flaked coconut
13 - 1 cup maraschino cherries, diced

# Instructions:

01 - Preheat oven to 175°C (350°F). Grease two 9x5 inch loaf pans.
02 - In a large mixing bowl, combine the flour, salt, baking soda, sugar and cinnamon.
03 - Add the walnuts, eggs, oil, banana, pineapple, vanilla, coconut and cherries to the dry ingredients. Stir just until blended, being careful not to overmix.
04 - Pour batter evenly into the prepared pans. Bake for 60 minutes, or until a toothpick inserted into the center of a loaf comes out clean.
05 - Cool in the pan for 10 minutes, then remove to a wire rack to cool completely before slicing.

# Notes:

01 - This tropical bread freezes well - wrap cooled loaves tightly in plastic wrap and aluminum foil.
02 - For extra flavor, toast the walnuts before adding them to the batter.
