Get your oven nice and hot at 425°F while you prepare everything else.

Grab a bowl and toss those halved baby potatoes with the olive oil, kosher salt, and just 1 tablespoon of the harissa paste until they're all coated nicely.

Spread your seasoned potatoes out in one layer on a baking sheet and pop them in the oven for about 25-28 minutes. Give them a good toss halfway through. You'll know they're done when you can easily pierce them with a fork.

Once they're out of the oven, toss the hot potatoes with that remaining tablespoon of harissa paste. Finish with a sprinkle of fresh parsley and a squeeze of lemon juice to brighten everything up.
