Spicy Harissa Potatoes (Print Version)

# Ingredients:

01 - 1.5 lbs baby potatoes, cut in half
02 - 2 tablespoons olive oil
03 - 1 teaspoon kosher salt
04 - 2 tablespoons harissa paste
05 - Fresh lemon juice, to taste
06 - Chopped parsley, for garnish

# Instructions:

01 - Get your oven nice and hot at 425°F while you prepare everything else.
02 - Grab a bowl and toss those halved baby potatoes with the olive oil, kosher salt, and just 1 tablespoon of the harissa paste until they're all coated nicely.
03 - Spread your seasoned potatoes out in one layer on a baking sheet and pop them in the oven for about 25-28 minutes. Give them a good toss halfway through. You'll know they're done when you can easily pierce them with a fork.
04 - Once they're out of the oven, toss the hot potatoes with that remaining tablespoon of harissa paste. Finish with a sprinkle of fresh parsley and a squeeze of lemon juice to brighten everything up.

# Notes:

01 - Harissa paste is a North African condiment easily found in well-stocked grocery stores. The Mina brand has a chunkier sauce consistency and comes in mild or spicy options.
02 - I used the spicy variety which gave these potatoes a medium heat level. Different brands vary in spiciness, so taste yours first and adjust the amount to match your heat preference.
03 - These spicy potatoes make an excellent side dish that pairs beautifully with grilled meats, fish, or vegetarian mains.
