Hamptons Vinaigrette (Print Version)

# Ingredients:

→ Vinaigrette Base

01 - 1 shallot, minced finely
02 - Zest and juice of 1 lemon
03 - 120ml champagne vinegar
04 - 2 tablespoons stone ground or whole grain mustard
05 - 1 tablespoon honey
06 - 240ml olive oil

→ Finishing

07 - 2 tablespoons fresh herbs (basil, dill, parsley), chopped
08 - Salt and freshly ground black pepper to taste

# Instructions:

01 - In a large bowl, combine the minced shallot with lemon zest, lemon juice, and champagne vinegar. Stir well and let sit for 15-20 minutes to lightly pickle the shallot and mellow its raw flavor.
02 - Add the mustard and honey to the shallot mixture. While whisking vigorously, slowly drizzle in the olive oil to create a proper emulsion.
03 - Once all the olive oil is incorporated, fold in the chopped herbs. Season with salt and freshly ground black pepper to taste. Use immediately or store refrigerated in an airtight container.
