Grilled Hawaiian Chicken Sandwiches (Print Version)

Juicy grilled chicken with pineapple, onion, and greens in a savory bun with tangy barbecue sauce.

# Ingredients:

→ Marinade and Chicken

01 - 1 pound boneless, skinless chicken breast
02 - 1/3 cup barbecue sauce
03 - 3 tablespoons pineapple juice
04 - 1 1/2 tablespoons soy sauce
05 - 1 garlic clove, minced
06 - 1 teaspoon fresh ginger, minced
07 - 1/2 teaspoon Sriracha, optional, more to taste

→ Sandwich and Garnishes

08 - 1 cup pineapple, sliced
09 - 4 reduced calorie hamburger rolls
10 - 1 red onion, sliced
11 - 1 jalapeno pepper, sliced
12 - 2 cups mixed greens
13 - Cooking spray

# Steps:

01 - Combine barbecue sauce, pineapple juice, soy sauce, minced garlic, ginger, and Sriracha in a bowl. Add chicken breasts and ensure even coating. Cover and marinate in the refrigerator for at least 30 minutes or up to overnight.
02 - Remove marinated chicken, allowing excess marinade to drip off. Lightly coat pineapple slices with cooking spray. Preheat a grill to medium-high heat. Grill chicken breasts and pineapple rings for 4 to 5 minutes per side, until the chicken is thoroughly cooked and pineapple has grill marks.
03 - Transfer leftover marinade to a saucepan. Bring to a rolling boil and cook for 4 to 5 minutes until slightly thickened. Use as a finishing sauce for the sandwiches.
04 - Layer the grilled chicken onto each hamburger roll, then top with grilled pineapple, sliced red onion, jalapeno, mixed greens, and a drizzle of the reduced barbecue sauce before serving.

# Notes:

01 - Marinating the chicken overnight will further enhance flavor and tenderness.
