Remove the crusts from each bread slice using a sharp knife. Place a slice on a clean surface and use a rolling pin to flatten it to approximately 1/16 to 1/8 inch thick. Repeat for all slices.

Lay one cheese slice or a neat line of shredded cheese along one edge of each flattened bread slice, leaving a 1/4 inch border. Sprinkle with garlic powder, paprika, or dried herbs if desired.

Starting from the edge with cheese, roll the bread into a compact cylinder. Place the seam down so it holds.

Brush the outside of each roll up with melted butter using a pastry brush, or spread softened butter over the surface for an even coating.

Heat a large non-stick skillet or griddle over medium-low to medium heat. Place roll ups seam-side down and cook in batches to avoid overcrowding. Grill for 2 to 4 minutes on the first side until golden and crisp. Use tongs to turn and crisp each side, cooking an additional 1 to 2 minutes per side, until evenly golden and cheese is melted. Total grill time is 5 to 8 minutes.

Remove roll ups from the pan and serve immediately while crisp and cheese is melted.
