Grilled Cheese Burrito Beef (Print Version)

Satisfying burrito with cheese, seasoned beef, crunchy tortilla chips, and tangy spicy mayo.

# Ingredients:

→ Beef Filling

01 - 1 pound ground beef
02 - 1 tablespoon olive oil
03 - 1 medium onion, diced
04 - 1 teaspoon kosher salt
05 - 1 teaspoon freshly ground black pepper
06 - 1 teaspoon smoked paprika
07 - 1 teaspoon dried oregano
08 - 1/2 cup tomato sauce

→ Assembly

09 - 4 large flour tortillas
10 - 3 tablespoons spicy mayonnaise
11 - 1 cup cooked fried rice
12 - 1 cup nacho cheese sauce
13 - 1 cup sour cream
14 - 1 cup tortilla chips, crushed

→ Optional

15 - 1/2 cup shredded Mexican cheese blend

# Steps:

01 - Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 5 minutes until translucent. Add ground beef and cook, breaking up any clumps, until fully browned. Season with salt, black pepper, smoked paprika, and dried oregano. Stir until the spices are aromatic, about 1 minute. Add tomato sauce and lower the heat. Simmer for 5 minutes to allow flavors to develop.
02 - Lay each flour tortilla flat on a clean surface. Spread approximately 1 tablespoon spicy mayonnaise down the center. Top with a portion of fried rice, then drizzle with nacho cheese sauce. Add a spoonful of sour cream and scatter crushed tortilla chips. Spoon the seasoned beef filling on top.
03 - Fold in the sides of each tortilla and roll tightly from the bottom, securing all fillings inside.
04 - Heat a non-stick skillet or griddle over medium heat. If desired, sprinkle about 2 tablespoons shredded Mexican cheese blend directly onto the hot surface for each burrito. Place the burrito seam-side down on the cheese and grill for 2-3 minutes per side until the exterior is crisp and golden brown.
05 - Transfer the grilled burritos to a platter and serve hot with additional spicy mayonnaise on the side for dipping.

# Notes:

01 - For best texture, grill seam-side down first to seal the burrito and form a crispy cheese crust.
