Heat a skillet over medium temperature and brown ground beef until fully cooked, breaking it apart. Drain excess fat.

Add taco seasoning and water to the skillet. Stir and simmer for 2–3 minutes until thickened. Mix in refried beans until evenly combined and heated through.

Lay out each tortilla and spoon an even portion of the beef and bean mixture down the center. Roll into burrito shape and arrange seam-side down in a rectangular baking dish.

Pour the red enchilada sauce evenly over rolled tortillas. Distribute cheddar and Monterey Jack cheeses across the top.

Place the baking dish uncovered in the oven and bake for 20–25 minutes until hot and cheese is bubbly.

Spoon additional sauce over each portion if desired. Garnish with chopped onions, black olives, and a dollop of sour cream.
