Grandma's Favorite Enchirito Ever (Print Version)

Cheesy, saucy enchiritos with beef, beans, and favorite toppings, baked golden. Perfect for comforting family dinners.

# Ingredients:

→ Filling

01 - 450 g ground beef
02 - 430 g canned refried beans
03 - 1 packet taco seasoning (about 28 g)
04 - 60 ml water

→ Assembly

05 - 6 large flour tortillas
06 - 285 g canned red enchilada sauce
07 - 170 g shredded cheddar cheese
08 - 60 g shredded Monterey Jack cheese

→ Optional Toppings

09 - Chopped onions
10 - Sliced black olives
11 - Sour cream

# Instructions:

01 - Preheat oven to 190°C.
02 - Heat a skillet over medium temperature and brown ground beef until fully cooked, breaking it apart. Drain excess fat.
03 - Add taco seasoning and water to the skillet. Stir and simmer for 2–3 minutes until thickened. Mix in refried beans until evenly combined and heated through.
04 - Lay out each tortilla and spoon an even portion of the beef and bean mixture down the center. Roll into burrito shape and arrange seam-side down in a rectangular baking dish.
05 - Pour the red enchilada sauce evenly over rolled tortillas. Distribute cheddar and Monterey Jack cheeses across the top.
06 - Place the baking dish uncovered in the oven and bake for 20–25 minutes until hot and cheese is bubbly.
07 - Spoon additional sauce over each portion if desired. Garnish with chopped onions, black olives, and a dollop of sour cream.

# Notes:

01 - To prevent soggy bottoms, allow enchiritos to rest for 3–5 minutes after baking before serving.
