Garlic Scape Hummus (Print Version)

01 - 1 can (15.5 ounces) chickpeas, drained and rinsed
02 - 1/2 cup thinly sliced garlic scapes or 4 medium garlic cloves, chopped
03 - 1/4 cup freshly squeezed lemon juice
04 - 6 tablespoons extra-virgin olive oil
05 - 3/4 teaspoon fine sea salt
06 - 1/2 teaspoon sweet Hungarian paprika

# Instructions:

01 - Drain and rinse the chickpeas thoroughly, slice garlic scapes or chop garlic cloves, and freshly squeeze the lemon juice.
02 - Add chickpeas, garlic scapes or garlic cloves, lemon juice, extra-virgin olive oil, sea salt, and sweet Hungarian paprika to a high-speed blender, arranging the liquids at the bottom for optimal blending.
03 - Blend the mixture on high speed until completely smooth and creamy, pausing to scrape down the sides as needed.
04 - Transfer to a serving bowl and, if desired, create decorative swirls with the back of a spoon. Garnish with olive oil, flaky sea salt, extra paprika, and thinly sliced garlic scapes or preferred herbs.
