# Ingredients:

01 - 1 to 2 tablespoons vegetable oil
02 - 6 large cloves garlic, finely chopped
03 - 1 large egg
04 - 2 cups cooked and cooled white rice
05 - 1 scallion, chopped
06 - 1 teaspoon soy sauce
07 - 1 teaspoon oyster sauce
08 - 1/4 to 1/2 teaspoon salt
09 - 1/8 to 1/4 teaspoon ground black pepper

# Steps:

01 - Add vegetable oil, finely chopped garlic, and 1/8 teaspoon salt to a medium sauté pan.
02 - Set pan over medium heat, cooking for 1 to 2 minutes until garlic turns golden brown. Remove garlic from oil, reserving garlic-infused oil in the pan.
03 - Crack egg into pan and scramble in garlic oil until partially set.
04 - Add cooled white rice, chopped scallion, soy sauce, oyster sauce, ground black pepper, and remaining salt to pan.
05 - Turn heat to high and mix thoroughly to combine all ingredients. Return reserved fried garlic to the pan and stir.
06 - Taste and add extra salt, pepper, or soy sauce as needed. Garnish with additional chopped scallion before serving.
