Add vegetable oil, finely chopped garlic, and 1/8 teaspoon salt to a medium sauté pan.

Set pan over medium heat, cooking for 1 to 2 minutes until garlic turns golden brown. Remove garlic from oil, reserving garlic-infused oil in the pan.

Crack egg into pan and scramble in garlic oil until partially set.

Add cooled white rice, chopped scallion, soy sauce, oyster sauce, ground black pepper, and remaining salt to pan.

Turn heat to high and mix thoroughly to combine all ingredients. Return reserved fried garlic to the pan and stir.

Taste and add extra salt, pepper, or soy sauce as needed. Garnish with additional chopped scallion before serving.
