Garlic Confit Olive Oil (Print Version)

Golden garlic gently baked in olive oil with aromatic herbs for velvety, mellow flavor.

# Ingredients:

→ Aromatics

01 - 9 ounces peeled garlic cloves
02 - 2 sprigs fresh rosemary or thyme

→ Oils

03 - 0.4 cup olive oil or neutral cooking oil

# Instructions:

01 - Set the oven to 250°F (120°C) and allow it to reach temperature.
02 - Place garlic cloves in a heatproof bowl, cover with boiling water, and let sit for 5 minutes. Drain and remove skins.
03 - Add peeled garlic cloves and fresh herbs to an ovenproof dish. Pour in enough oil to completely submerge the garlic.
04 - Bake in the preheated oven for 20 to 25 minutes, or until garlic turns golden and is fork-tender. The oil will become aromatic.
05 - Allow the confit to cool completely. Transfer garlic and infused oil to a sterilized, airtight jar and refrigerate for up to two weeks.
