Set the oven to 250°F (120°C) and allow it to reach temperature.

Place garlic cloves in a heatproof bowl, cover with boiling water, and let sit for 5 minutes. Drain and remove skins.

Add peeled garlic cloves and fresh herbs to an ovenproof dish. Pour in enough oil to completely submerge the garlic.

Bake in the preheated oven for 20 to 25 minutes, or until garlic turns golden and is fork-tender. The oil will become aromatic.

Allow the confit to cool completely. Transfer garlic and infused oil to a sterilized, airtight jar and refrigerate for up to two weeks.
