Melt 2 tablespoons of unsalted butter in a skillet over medium heat. Add sliced zucchini, minced garlic, Italian seasoning, salt, and black pepper. Sauté for 5 to 7 minutes, stirring occasionally, until zucchini is tender and lightly golden. Remove from heat and set aside.

In a separate skillet or griddle, melt the remaining 2 tablespoons of unsalted butter over medium heat.

Place a slice of bread in the heated skillet. Top with shredded mozzarella, a portion of sautéed zucchini, and shredded cheddar. Cover with a second slice of bread.

Cook the sandwich for 3 to 4 minutes, pressing gently, until the bottom is golden. Carefully flip and cook another 3 to 4 minutes until the bread is golden and the cheese is fully melted.

Remove sandwich from the skillet. Repeat with remaining ingredients. Slice each sandwich in half and garnish with fresh basil if desired. Serve immediately while hot.
