Garlic Butter Zucchini Melt (Print Version)

# Ingredients:

→ Vegetables

01 - 2 medium zucchinis, sliced into 1/4-inch rounds

→ Dairy

02 - 4 tablespoons unsalted butter, divided
03 - 8 ounces shredded mozzarella cheese
04 - 4 ounces shredded cheddar cheese

→ Bread

05 - 8 slices bread

→ Aromatics

06 - 2 cloves garlic, minced

→ Seasonings

07 - 1 teaspoon Italian seasoning
08 - Salt, to taste
09 - Black pepper, to taste

→ Garnish

10 - Fresh basil leaves, for garnish (optional)

# Steps:

01 - Melt 2 tablespoons of unsalted butter in a skillet over medium heat. Add sliced zucchini, minced garlic, Italian seasoning, salt, and black pepper. Sauté for 5 to 7 minutes, stirring occasionally, until zucchini is tender and lightly golden. Remove from heat and set aside.
02 - In a separate skillet or griddle, melt the remaining 2 tablespoons of unsalted butter over medium heat.
03 - Place a slice of bread in the heated skillet. Top with shredded mozzarella, a portion of sautéed zucchini, and shredded cheddar. Cover with a second slice of bread.
04 - Cook the sandwich for 3 to 4 minutes, pressing gently, until the bottom is golden. Carefully flip and cook another 3 to 4 minutes until the bread is golden and the cheese is fully melted.
05 - Remove sandwich from the skillet. Repeat with remaining ingredients. Slice each sandwich in half and garnish with fresh basil if desired. Serve immediately while hot.

01 - Allow the sautéed zucchini to drain briefly on paper towels if excess moisture is present to prevent sogginess in the sandwich.
