# Ingredients:

01 - 1 pound sirloin steak, cut into bite-sized pieces
02 - 1 pound baby potatoes, halved or quartered

03 - 3 tablespoons unsalted butter, divided
04 - 1 tablespoon olive oil
05 - 4 cloves garlic, minced
06 - 1 teaspoon dried thyme
07 - 1 teaspoon dried rosemary
08 - Salt, to taste
09 - Ground black pepper, to taste

10 - Fresh parsley, finely chopped

# Steps:

01 - Heat 1 tablespoon butter with the olive oil in a large skillet over medium heat. Add the potatoes; season with salt, pepper, dried rosemary, and thyme. Cook for 10 to 12 minutes, stirring occasionally, until potato pieces are fork-tender and golden brown. Remove potatoes from the skillet and set aside.
02 - Add 1 tablespoon butter to the same skillet. Arrange steak pieces in a single layer, ensuring the pan is not overcrowded. Sear for 2 to 3 minutes per side until deeply browned and cooked to desired doneness. Remove steak from the skillet and set aside.
03 - Lower the heat. Add remaining 1 tablespoon butter along with the minced garlic to the skillet. Sauté for about 1 minute until garlic becomes fragrant without browning.
04 - Return the cooked steak and potatoes to the skillet. Toss thoroughly to coat everything in the hot garlic butter. Sprinkle generously with chopped parsley and serve immediately.
