# Ingredients:

→ Mushroom Filling

01 - 1 tablespoon unsalted butter
02 - 1 tablespoon olive oil
03 - 1 1/2 cups finely chopped button or cremini mushrooms
04 - 2 cloves garlic, minced
05 - 1/2 teaspoon dried thyme
06 - 1/4 teaspoon kosher salt
07 - 1/4 teaspoon ground black pepper

→ Chicken

08 - 4 boneless, skinless chicken breasts
09 - 1 teaspoon kosher salt
10 - 1/2 teaspoon ground black pepper
11 - 1 teaspoon paprika
12 - 1 teaspoon garlic powder
13 - 1 tablespoon olive oil, for searing
14 - 4 slices mozzarella cheese or 1 cup shredded mozzarella
15 - Toothpicks or kitchen twine, for securing

→ Garlic Butter Sauce

16 - 2 tablespoons unsalted butter
17 - 2 cloves garlic, minced
18 - 1 tablespoon fresh parsley, chopped
19 - Juice of 1/2 lemon, optional

# Steps:

01 - Melt butter and olive oil in a skillet over medium heat. Add mushrooms and sauté for 5 to 6 minutes until softened and golden. Stir in minced garlic, dried thyme, salt, and pepper. Cook for an additional 1 to 2 minutes until fragrant, then set aside to cool slightly.
02 - Preheat the oven to 375°F. Slice each chicken breast horizontally to butterfly, ensuring not to cut through the entire piece. Open each breast and season both sides evenly with salt, black pepper, paprika, and garlic powder.
03 - Spoon the mushroom mixture evenly into each chicken breast. Top the filling with mozzarella cheese. Close the chicken over the filling and secure the edges with toothpicks or kitchen twine.
04 - Heat olive oil in an oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and sear for 3 to 4 minutes on each side until golden brown.
05 - Transfer the skillet with chicken to the oven. Bake for 15 to 20 minutes until the internal temperature reaches 165°F.
06 - While chicken bakes, melt butter in a small saucepan over medium heat. Add minced garlic and sauté for 1 to 2 minutes. Stir in parsley and optionally squeeze in lemon juice.
07 - Remove the chicken from the oven and discard toothpicks or twine. Drizzle the garlic butter sauce over the hot chicken and serve immediately.
