Garlic Butter Cod Chili Lime (Print Version)

Flaky cod strips with garlic butter, finished with tangy sweet chili lime sauce.

# Ingredients:

→ For the cod

01 - 1.1 pounds cod fillets, cut into strips
02 - 3 tablespoons unsalted butter
03 - 3 cloves garlic, finely minced
04 - 1/2 teaspoon kosher salt
05 - 1/2 teaspoon freshly ground black pepper
06 - 1/2 teaspoon paprika
07 - Juice of 1/2 lime
08 - 1 tablespoon olive oil

→ For the sweet chili lime sauce

09 - 4 tablespoons sweet chili sauce
10 - Juice of 1 lime
11 - 1 teaspoon honey
12 - 1 teaspoon soy sauce or fish sauce
13 - 1 teaspoon finely grated garlic or ginger

# Steps:

01 - Pat cod fillet strips dry using paper towels. Evenly season with salt, black pepper, paprika, and drizzle with lime juice.
02 - Heat olive oil and butter together in a large skillet over medium heat. Add the minced garlic and sauté for 30 seconds until aromatic but not browned.
03 - Place seasoned cod strips into the pan. Sear for 2 to 3 minutes per side, or until golden on the outside and fish flakes easily with a fork. Remove cooked cod from pan and set aside.
04 - In a small mixing bowl, whisk sweet chili sauce, fresh lime juice, honey, soy sauce or fish sauce, and grated garlic or ginger until fully combined.
05 - Arrange cod strips on a serving platter. Drizzle prepared sauce over the fish or offer it on the side. Spoon remaining garlic butter from the pan over the cod to enhance flavor.

01 - For best texture, avoid overcooking the cod; remove from heat as soon as it flakes easily.
