Garlic Butter Beef and Rice (Print Version)

01 - 1 pound ground beef
02 - 1 cup uncooked long-grain white rice
03 - 3 cups low-sodium beef broth
04 - 1 small onion, diced
05 - 4 cloves garlic, minced
06 - 3 tablespoons unsalted butter, divided
07 - 1 cup shredded cheddar cheese
08 - 1/2 cup grated Parmesan cheese
09 - 1/2 cup whole milk
10 - Salt, to taste
11 - Black pepper, to taste
12 - 1 teaspoon Italian seasoning

# Instructions:

01 - Melt 1 tablespoon of butter in a large skillet over medium heat. Add diced onion and cook for 3 to 4 minutes until softened.
02 - Add ground beef to the skillet. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
03 - Stir in minced garlic and cook for 1 minute until fragrant.
04 - Add uncooked rice, beef broth, Italian seasoning, salt, and black pepper. Stir thoroughly.
05 - Bring mixture to a boil. Reduce heat to low, cover, and simmer for 18 to 20 minutes until rice is tender and most liquid is absorbed.
06 - In a small saucepan over low heat, melt remaining 2 tablespoons of butter. Stir in milk, cheddar cheese, and Parmesan cheese; cook, stirring constantly, until smooth and creamy.
07 - Pour cheese sauce over beef and rice mixture in skillet. Stir to combine evenly.
08 - Cook uncovered for 2 to 3 minutes. Sprinkle with chopped parsley before serving if desired.
