Unroll dough onto a lightly floured surface. If using crescent rolls, press seams together to form a uniform rectangle.

Evenly spread cooled beef mixture over the dough, leaving a 1-inch border along one long edge. Gently press filling into the dough.

Starting from the long edge without the border, roll the dough tightly into a log. Pinch the seam to seal. Slice log into 1 to 1.5-inch thick rounds and place rollups cut-side up on a parchment-lined baking sheet, spacing them apart.

In a small bowl, combine melted butter with minced garlic and parsley if using.
