Frito Cowboy Cabbage Bake (Print Version)

01 - 1 pound ground beef
02 - 1 packet taco seasoning
03 - 4 cups green cabbage, chopped
04 - 1 cup tomatoes, diced
05 - 1 cup canned black beans, drained and rinsed
06 - 1 cup canned sweet corn, drained
07 - 2 cups Fritos corn chips
08 - 1 1/2 cups cheddar cheese, shredded
09 - 1/2 cup ranch dressing or Southwest-style dressing

# Steps:

01 - In a large skillet over medium heat, cook the ground beef until fully browned, breaking it up as it cooks. Drain off any excess fat.
02 - Add the taco seasoning and a splash of water to the cooked beef. Stir thoroughly and simmer for 2 to 3 minutes until the seasoning is fully incorporated.
03 - Chop the green cabbage, dice the tomatoes, and drain and rinse both the black beans and sweet corn.
04 - In a large bowl or casserole dish, layer the cabbage, seasoned beef, black beans, corn, and tomatoes. Gently toss to combine.
05 - Top the mixture with Fritos corn chips and evenly sprinkle with shredded cheddar cheese.
06 - Drizzle ranch dressing or Southwest-style dressing over the top just before serving. Toss lightly if desired to distribute the dressing.

# Notes:

01 - For added flavor, use a blend of sharp cheddar and Monterey Jack cheese. Serve immediately for best texture with crisp corn chips.
