Fried Cheese Stuffed Doritos (Print Version)

# Ingredients:

01 - 8 mozzarella sticks
02 - 1 cup crushed Doritos
03 - 1 cup all-purpose flour
04 - 2 large eggs, beaten
05 - 1 cup fine breadcrumbs
06 - Vegetable oil, for deep frying

# Steps:

01 - Arrange the crushed Doritos, all-purpose flour, and fine breadcrumbs in three separate shallow dishes. Beat eggs in a fourth shallow bowl until fully combined.
02 - Dredge each mozzarella stick in flour, shake off excess, then dip into beaten eggs. Roll in crushed Doritos to achieve an even coating. For a thicker crust, repeat dipping in egg and then coating in Doritos a second time.
03 - Arrange breaded mozzarella sticks on a plate and place in the freezer for at least 30 minutes to set the coating and minimize cheese leakage during frying.
04 - Pour vegetable oil into a deep fryer or large saucepan to a depth of at least 2 inches. Heat oil to 375°F (190°C), checking temperature with a kitchen thermometer.
05 - Working in batches, fry mozzarella sticks for 1 to 2 minutes per side, turning as needed, until all sides are deep golden brown and crisp. Avoid overcrowding the pan.
06 - Transfer fried cheese sticks from the oil using a slotted spoon and place on a plate lined with paper towels to absorb extra oil.
07 - Present while hot with preferred dipping sauces such as marinara or ranch.
