Heat a small nonstick skillet over medium heat. Add oil or butter and allow it to melt, coating the pan evenly.

Make several small cuts around the edge of each bologna slice to prevent curling, then add to the hot pan. Cook for 1–2 minutes per side until browned and edges begin to crisp, flipping halfway through.

Place the slice of American cheese on top of the cooked bologna and let it melt gently for about 30 seconds.

For extra crunch, toast the bread slices in the skillet for 1–2 minutes per side until golden, or toast separately in a toaster.

Apply mustard evenly onto one slice of bread.

Layer the fried bologna with melted cheese onto the prepared bread slice. Top with the second slice of bread.

Cut the sandwich in half if preferred and serve warm.
