Fresh Tomato Shrimp Pasta (Print Version)

# Ingredients:

01 - 8 ounces dry fettuccine pasta
02 - 3 cloves garlic
03 - ½ sweet onion, cut into wedges
04 - 3 tablespoons fresh oregano leaves
05 - 4 tablespoons olive oil
06 - 4 medium tomatoes, chopped
07 - 3 tablespoons chopped fresh basil
08 - salt and pepper to taste
09 - 1 cup spinach leaves
10 - 1 pound cooked shrimp, peeled and deveined
11 - 8 ounces fresh mozzarella cheese, diced

# Instructions:

01 - Bring a large pot of lightly salted water to a boil. Add pasta and cook until tender, about 8 minutes. Drain.
02 - Combine garlic, onion, and oregano in the bowl of a food processor; pulse until finely chopped. Heat olive oil in a large skillet over medium heat. Add the onion mixture and cook, stirring, until fragrant and almost golden.
03 - Mix in chopped tomatoes, basil, salt, and pepper. Simmer for about 5 minutes, stirring occasionally.
04 - Mix in spinach leaves until wilted. Stir in shrimp and cook until heated through.
05 - Toss together the shrimp mixture and cooked pasta in a large serving bowl. Mix in diced mozzarella cheese.
