# Ingredients:

01 - 2 cups all-purpose flour
02 - 1/4 cup granulated sugar
03 - 1 tablespoon baking powder
04 - 1/2 teaspoon ground cinnamon
05 - 1/4 teaspoon salt
06 - 2/3 cup whole milk
07 - 2 large eggs
08 - 2 tablespoons unsalted butter, melted
09 - 1 teaspoon vanilla extract
10 - 1 1/2 cups fresh peaches, peeled and diced

11 - Vegetable oil, for deep-frying

→ Glaze

12 - 1 cup powdered sugar
13 - 2 to 3 tablespoons milk
14 - 1/2 teaspoon vanilla extract

# Instructions:

01 - Pour vegetable oil into a deep skillet or pot until it reaches a depth of 2 to 3 inches. Heat oil to 350°F (175°C) using a kitchen thermometer for accuracy.
02 - In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt until evenly blended.
03 - In a separate bowl, whisk together the whole milk, eggs, melted unsalted butter, and vanilla extract until smooth.
04 - Pour the wet mixture into the bowl with the dry ingredients and mix gently until just combined; do not overmix. Fold in the diced fresh peaches until evenly distributed throughout the batter.
05 - Using a tablespoon or a small scoop, carefully drop heaping spoonfuls of batter into the hot oil. Fry for 2 to 3 minutes per side until golden brown and fully cooked. Work in small batches to avoid crowding.
06 - Remove cooked fritters with a slotted spoon and transfer to a paper towel-lined tray to absorb any excess oil.
