Fresh Cucumber Caprese Salad (Print Version)

A crisp blend of cucumber, tomatoes, mozzarella, and herbs tossed with balsamic vinaigrette.

# Ingredients:

→ Marinade

01 - 2 tablespoons olive oil
02 - 1 tablespoon balsamic vinegar
03 - 1 tablespoon dried oregano
04 - 1 tablespoon dried basil
05 - Pinch salt
06 - Pinch black pepper

→ Salad

07 - 1 cucumber, peeled, fork-scored, thinly sliced, then diced
08 - 1 1/2 cups cherry tomatoes, quartered
09 - 8 ounces fresh mozzarella, cut into bite-sized pieces
10 - 1/2 large red onion, finely chopped
11 - Optional: fresh basil leaves

# Steps:

01 - In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, dried basil, salt, and black pepper until fully combined. Set aside to allow the flavors to infuse.
02 - Peel the cucumber and use a fork to score the surface lengthwise. Thinly slice the cucumber and dice into small pieces. Place the diced cucumber in a medium mixing bowl.
03 - Quarter the cherry tomatoes. Finely chop the red onion. Add both the tomatoes and onion to the bowl with the cucumber.
04 - Slice the mozzarella into bite-sized pieces, or use pearl mozzarella if available. Add the cheese to the bowl, ensuring it is evenly distributed.
05 - Drizzle the prepared herb marinade over the vegetables and cheese. Toss gently with a spoon or spatula until all pieces are thoroughly coated.
06 - Allow the salad to rest for 10 minutes before serving so the flavors meld. Garnish with fresh basil leaves if desired.
