→ Base Ingredients

01 - 1 loaf challah bread (about 1½ pounds, 1-2 days old), cut into 1-inch cubes
02 - 5 large eggs

04 - 2 tablespoons brown sugar
05 - 2 teaspoons vanilla extract
06 - 1 teaspoon cinnamon
07 - ¼ teaspoon nutmeg
08 - ¼ teaspoon sea salt

→ Crunchy Topping

10 - 2 tablespoons unsalted butter or coconut oil, melted
11 - 2 tablespoons brown sugar
12 - ½ cup chopped pecans

→ For Serving

13 - Pure maple syrup

# Instructions:

01 - Grease a 9x13-inch baking dish. Arrange the bread cubes evenly in the prepared dish.
02 - In a large bowl, whisk together the eggs, milk, brown sugar, vanilla, cinnamon, nutmeg, and salt until well combined. Pour this custard mixture evenly over the bread cubes.
03 - Let the casserole stand for 30 minutes at room temperature so the bread can soak up all the custard. For best results, you can cover and refrigerate overnight.
04 - Preheat your oven to 350°F.
05 - Drizzle the melted butter over the soaked bread, then sprinkle with brown sugar and pecans. Cover with foil and bake for 35 minutes. Uncover and continue baking for 10-20 more minutes until the top is golden brown and the custard is set.
06 - Let the casserole rest for 10 minutes, covered loosely with foil. Serve warm with maple syrup.
