French Potato Salad (Print Version)

# Ingredients:

01 - 1 1/2 pounds potatoes, cubed (optionally peeled)
02 - 3 tablespoons parsley, chopped
03 - 3 tablespoons dill, chopped
04 - 3 green onions, thinly sliced
05 - 1 shallot, finely diced (optional)
06 - 1/4 cup cornichons (or dill pickles), diced (optional)

→ Dressing

07 - 2 tablespoons olive oil
08 - 2 tablespoons red wine vinegar (or sherry vinegar)
09 - 1 tablespoon dijon mustard
10 - 1 tablespoon grainy mustard
11 - 1 clove garlic, minced/grated (optional)
12 - 1 tablespoon cornichon (pickle) juice (optional)
13 - salt and pepper to taste

# Instructions:

01 - Place the potatoes in a large pot, cover with water, add a pinch of salt, bring to a boil, reduce the heat and simmer until the potatoes are just tender, about 8-10 minutes. Remove from water and let them cool.
02 - Toss the potatoes, parsley, dill, green onions, shallot, and cornichons in the mixture of the oil, vinegar, mustards, garlic, cornichon juice, salt and pepper.
03 - Enjoy immediately or let sit, covered, in the refrigerator for an hour or overnight to develop flavors.

01 - This French-style potato salad contains no mayonnaise, making it lighter and perfect for outdoor gatherings.
02 - The salad tastes even better after marinating in the refrigerator overnight.
