Preheat oven to 375°F (190°C). Lightly grease a baking dish or line a baking sheet with parchment paper.

Lay each tortilla flat on a clean surface. Arrange thinly sliced roast beef evenly over each tortilla, then layer generously with shredded cheese.

Roll each tortilla tightly and place seam-side down into the prepared baking dish.

In a small bowl, combine melted butter, garlic powder, and onion powder. Mix until well blended.

Brush the tops of the roll ups evenly with the seasoned melted butter. Bake for 18 to 22 minutes, or until tortillas are golden and cheese is fully melted.

While roll ups are baking, prepare au jus according to package directions using 2 cups of water. Heat until hot and set aside for serving.

Once baked, slice roll ups in half if desired. Garnish with chopped parsley and serve warm with au jus for dipping.
