Hearty beef nachos with cheese, beans, tomatoes, and green onions for a savory, shareable snack.

# Ingredients:

01 - 1 pound ground beef
02 - 1/2 yellow onion, diced
03 - 2 packages sturdy tortilla chips, 16 ounces each
04 - 1 can refried beans
05 - 16 ounces shredded cheese blend (cheddar and Monterey Jack)
06 - 3 Roma tomatoes, diced
07 - 2 green onions, sliced

→ Seasoning

08 - 1 packet taco seasoning or homemade blend (1 teaspoon cumin, 1 teaspoon chili powder, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon paprika)
09 - 3/4 cup water

# Steps:

01 - Set the oven to 400°F.
02 - In a skillet over medium-high heat, cook the ground beef with diced yellow onion for around 8 minutes, stirring until beef is well browned. Drain excess fat.
03 - Return the drained beef to the skillet. Sprinkle with taco seasoning, add 3/4 cup water, and simmer on low heat for approximately 5 minutes, until most of the liquid evaporates.
04 - Line two baking sheets with parchment paper and arrange a layer of tortilla chips evenly on each.
05 - Drop spoonfuls of refried beans over the chips, distributing half of the can between the trays.
06 - Divide the seasoned ground beef evenly between the two trays, spreading it over the tortillas and beans.
07 - Sprinkle the shredded cheddar and Monterey Jack cheese blend evenly over the beef and chips.
08 - Bake in the preheated oven for 15 minutes or until the cheese is melted and bubbling.
09 - Remove trays from the oven and immediately scatter diced Roma tomatoes and sliced green onions across the top.
10 - Serve immediately while hot.
