In a skillet over medium-high heat, cook the ground beef with diced yellow onion for around 8 minutes, stirring until beef is well browned. Drain excess fat.

Return the drained beef to the skillet. Sprinkle with taco seasoning, add 3/4 cup water, and simmer on low heat for approximately 5 minutes, until most of the liquid evaporates.

Line two baking sheets with parchment paper and arrange a layer of tortilla chips evenly on each.

Drop spoonfuls of refried beans over the chips, distributing half of the can between the trays.

Divide the seasoned ground beef evenly between the two trays, spreading it over the tortillas and beans.

Sprinkle the shredded cheddar and Monterey Jack cheese blend evenly over the beef and chips.

Bake in the preheated oven for 15 minutes or until the cheese is melted and bubbling.

Remove trays from the oven and immediately scatter diced Roma tomatoes and sliced green onions across the top.
