01 - 1 pound breakfast sausage, mild or spicy
02 - 1 cup Bisquick baking mix
03 - 1 cup shredded cheddar cheese
04 - 4 large eggs

# Steps:

01 - Preheat oven to 350°F and thoroughly grease all compartments of a 12-cup muffin tin.
02 - In a skillet over medium heat, cook the breakfast sausage, breaking it into small pieces as it browns. Drain any excess grease.
03 - In a large mixing bowl, whisk eggs until completely smooth. Fold in the cooked sausage, shredded cheddar cheese, and Bisquick. Mix until just combined without overmixing.
04 - Spoon the mixture evenly into the prepared muffin tin, filling each well about two-thirds full.
05 - Bake in the center of the oven for 20 minutes or until muffin tops are golden and a toothpick inserted into the center comes out clean.
06 - Allow muffins to cool in the tin for several minutes before transferring to a wire rack. Serve warm or store as desired.
