Easy Cheesy Pockets (Print Version)

# Ingredients:

→ Dough

01 - One 13.8-ounce can chilled pizza dough or use your own batch

→ Filling

02 - 1 teaspoon Italian seasoning blend
03 - Optional: 1/4 cup shredded Parmesan cheese
04 - 1/2 cup chopped pepperoni or minis (totally your call)
05 - 1 and 1/2 cups mozzarella, shredded
06 - 3/4 cup pizza sauce

→ Finishing

07 - 1 tablespoon melted butter or olive oil for brushing on top

→ Optional Fillings

08 - Black olives
09 - Fresh mushrooms
10 - Chopped bell peppers
11 - Cooked sausage crumbles

# Instructions:

01 - Give them a few minutes to cool down and dunk ‘em in extra sauce if you want.
02 - Pop them in the oven and bake until crisp and golden, about 15 to 18 minutes.
03 - Grab a brush and swipe melted butter or olive oil over the tops. Toss on more cheese or seasoning if you’re feeling extra.
04 - Fold your dough to cover the fillings and pinch the seams closed with a fork. You want them sealed up tight.
05 - Smear some sauce on one side of each dough square. Then heap on mozzarella, your favorite extras, a sprinkle of parm, and that Italian spice mix.
06 - Spread the dough out on a floured countertop and slice into 8 even pieces—squares or rectangles work.
07 - Crank your oven up to 400°F (200°C). Get a baking sheet ready with a sheet of parchment.

# Notes:

01 - If you want even crispier outsides, poke a few tiny holes in the top of each pocket so steam can get out while they bake.
02 - They freeze great after baking. Just toss in a 350°F oven for 10 to 15 minutes straight from the freezer when hunger hits.
