Breakfast Enchiladas Cheddar Bacon (Print Version)

Eggs, bacon, sausage and cheese rolled in tortillas, baked with zesty salsa sauce and topped with fresh cilantro.

# Ingredients:

→ Enchilada Salsa

01 - 2 tablespoons unsalted butter
02 - 1 tablespoon all-purpose flour
03 - 1/2 teaspoon ground cumin
04 - 1 cup whole milk
05 - 3 ounces cream cheese
06 - 1/3 cup tomato salsa
07 - 1 1/2 cups shredded cheddar cheese

→ Filling

08 - 8 large eggs, beaten
09 - Salt to taste
10 - Black pepper to taste
11 - 12 ounces cooked maple sausage, crumbled and divided
12 - 12 ounces cooked bacon, crumbled and divided
13 - 1/2 cup shredded cheddar cheese
14 - 8 taco-size flour tortillas

→ Toppings

15 - 1 cup shredded cheddar cheese
16 - Fresh cilantro, chopped

# Steps:

01 - Preheat oven to 350°F. Lightly grease a 9 x 13 inch baking dish.
02 - In a saucepan over medium heat, melt butter. Whisk in flour and cook for 30 seconds until lightly golden. Stir in ground cumin, then gradually whisk in milk. Let the mixture come to a gentle boil; reduce to medium-low. Add cream cheese, stirring until fully melted. Incorporate salsa and cheddar cheese, mixing until smooth. Remove from heat and set aside.
03 - Heat a skillet over medium-high. Scramble beaten eggs with salt and black pepper until just set. Remove eggs from heat.
04 - Lay tortillas flat. Spread scrambled eggs evenly among tortillas. Top each with portions of sausage and bacon, reserving a portion of each for garnish. Sprinkle a tablespoon of cheddar cheese and a spoonful of enchilada salsa over each tortilla.
05 - Roll each tortilla tightly and place seam-side down in the prepared baking dish.
06 - Pour remaining enchilada salsa evenly over the filled tortillas. Sprinkle with remaining cheddar cheese, reserved sausage, and reserved bacon. Bake uncovered for 20 minutes until cheese is melted and bubbly.
07 - Remove from oven and sprinkle with chopped cilantro. Allow enchiladas to rest 5 to 10 minutes prior to serving.
