Doritos Chicken Casserole Bake (Print Version)

01 - 3 cups Nacho Cheese Doritos, lightly crushed
02 - 3 cups cooked chicken breast, cut into chunks
03 - 1 1/2 cups canned corn, drained
04 - 14 ounces canned black beans, drained and rinsed
05 - 1 1/2 cups prepared salsa
06 - 10.75 ounces canned condensed cream of chicken soup
07 - 1 cup sour cream
08 - 2 cups cheddar cheese, shredded (divided use)
09 - 3 tablespoons taco seasoning

# Steps:

01 - Preheat oven to 350°F (175°C) and lightly coat a 9x13-inch baking dish with vegetable oil spray.
02 - In a large mixing bowl, combine chicken breast chunks, drained corn, black beans, salsa, condensed cream of chicken soup, sour cream, 1 cup shredded cheddar cheese, and taco seasoning. Mix thoroughly to evenly distribute all ingredients.
03 - Spread the chicken mixture evenly into the prepared baking dish.
04 - Place the baking dish on the center rack and bake, uncovered, for 20 minutes.
05 - Remove the baking dish from the oven. Evenly sprinkle remaining 1 cup shredded cheddar cheese over the casserole, then top with lightly crushed Nacho Cheese Doritos. Return to the oven and bake for an additional 10 minutes until cheese is melted and topping is golden.

# Notes:

01 - For extra flavor, layer some crushed Doritos on the bottom of the dish before adding the filling. Allow casserole to cool for 5 minutes before serving to aid slicing.
