In a large skillet over medium-high heat, cook ground beef, breaking it up with a wooden spoon until no longer pink. Drain excess fat. Stir in taco seasoning, if using.

Add cheddar cheese soup, cream of chicken soup, evaporated milk, and diced green chilies to the cooked beef. Stir well and cook over medium heat until gently bubbling and heated through.

Spread half of the Doritos (approx. 200 g) evenly on the bottom of the prepared dish, lightly crushing chips to maintain texture.

Spoon half of the hot meat sauce over the Dorito layer, spreading evenly. Sprinkle with about 100 g shredded Mexican cheese.

Top with the remaining Doritos, then the rest of the meat mixture. Finish with the remaining shredded cheese for a thick, even layer.

Place dish in the preheated oven. Bake for 20 minutes, or until cheese is fully melted, bubbling, and lightly golden at the edges.

Remove casserole from oven and rest for 5 minutes before cutting. Serve hot with desired toppings such as sour cream, green onions, tomatoes, avocado, or salsa.
